Applications are invited to a researcher to join the formation of installation and digestion (NCDL) on the campus of the University of Nottingham Soton Bonington. This firm post is part of a project funded by BBSRC, which is delivered in partnership with Adamo Foods, to develop inverted fungal iron for human nutrition.
This role will include the use of the digestive system in the laboratory to determine the vital access to iron and the digestion of amino acids to estimate the quality of protein, as well as Caco-2 cell models to assess iron absorption. A successful candidate will work with ADAMO FOODS to improve fermentation parameters to enhance fungal biomass and nutritional quality, and apply advanced analytical culture and analytical cells.
Candidates must have a PhD (or equivalent) in food science, nutrition, or relevant discipline, with experience in the laboratory digestion, especially the use of fixed digestive model, food analysis (minerals, proteins/amino acids and fibers), and techniques in examining food composition. Experience with cell culture methods is desirable. Strong communication skills, initiative, adherence to the project and the ability to work in a cooperative way are necessary.
